I know I'm a dork but one thing I've learned during these last 18 months in grad school -- always have extra work so students don't sit idly.
Yeah - it's funny, this was supposed to be "busy season" and everyone in my field talks about how you'll work soooooo many hours, but I've found that I kept much longer hours during school.
